Pina Colada Muffins

Hi Everyone, I was in the mood for some more baking this afternoon and decided to try a new recipe I found for Pina Colada Muffins. I found the recipe on allrecipes.com http://allrecipes.com/Recipe/Pina-Colada-Muffins/Detail.aspx They are so light and fluffy as well as smell and taste oh so yum yum yummy to my tummy. Anyhow here's the recipe. Enjoy !!

Pina Colada Muffins

Ingredients

1/2 cup white sugar
1/4 cup margarine
1 egg
1 cup sour cream
1 teaspoon rum flavored extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 (15 ounce) can crushed pineapple, drained
1/2 cup flaked coconut

Directions

Preheat oven to 375 degrees F (190 degrees C). Lightly grease a muffin pan, or use paper liners.
In a large bowl, combine sugar, margarine, egg, sour cream and rum extract. Beat together until smooth. In a medium bowl, mix together flour, baking powder, baking soda and salt. Blend into egg mixture. Stir in pineapple and coconut. Divide batter into 12 muffin cups.
Bake in preheated oven for 20 to 25 minutes, or until the tops spring back when lightly tapped.

Sour Cream Coffee Cake



Hi Everyone sorry I haven't been around lately but I'm back now. Just thought I'd share with you a really yummy coffee cake recipe I just made recently. Hope you enjoy !!

Sour Cream Coffe Cake

1 stick Butter

2 eggs

2 cups Flour

1and 1/2 tsp. baking soda

1 tsp. baking powder

1 cup Sour Cream

1 tsp vanilla extract

1 cup Sugar
Topping/Filling
Cinnamon and Sugar MixtureChocolate Chips
Preaheat overn to 350 degrees Farenheit.

Cream butter and sugar. Add eggs and vanilla and beat. Then add baking soda to sour cream. In another bowl add flour and ba

king powder. Add sour cream mixture to egg mixture and beat. Then add dry ingredients and beat till smooth. Pour half of batter into greased tube pan or other pan. Then sprinkle with Chocolate Chips and Cinnamon and Sugar. Then add rest of batter to pan and then sprinkle top with more Chocolate Chips and Cinnamon and Sugar. Then finally at in a 350 degree farenheit oven for about 45 minutes or until toothpick/cake tester comes out clean. Then take out of oven and let cool.

Banana Bread

Hi Everyone,
Here's a really yummy recipe for banana bread that I just made this morning. It's oh so scrumdillyicious and smells and tastes oh so yum yum yummy to my tummy. It calls for nuts but I decided that I didn't want nuts this time around so I put in chocolate chips instead. Oh how I love banana bread. Anyhow here's the recipe.

Banana Bread

1 and 1/4 cups sugar

1/2 cup of butter of margarine,softened

2 eggs

1 and 1/2 cups mashed very ripe bananas ( 3 medium)

1/2 cup milk

1 tsp. vanilla

1 tsp. baking soda

1 tsp. salt

1 cup chopped nuts if desired ( I used chocolate chips instead)

1) Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350 degerees Farenheit. Grease bottoms only of 2 (8x4-inch) loaf pans or 1 (9x5-inch) loaf pan with shortening or cooking spray.

2) In large bowl, stir sugar and butter until well mixed. Stir in bananas, milk and vanilla; beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts ( I used chocolate chips instead). Divide batter evenly between 2 8-inch pans or pour into 9-inch pan.

3) Bake 8-inch loafs about an hour, 9-inch about 1 hour and 15 minutes, or until toothpick comes out clean. Cool in pans on cooling rack 10 minutes.

4) Loosen sides of loaves from pans, remove from pans and place top side up on cooling rack. Cool completely for about 2 hours, before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

Blueberry-Banana Bread - Omit nuts. Stir in 1 cup fresh or frozen blueberries into batter.
