Chocolate Chip Toffee Bars Recipe

Hi Everyone, it's Lara here again. This afternoon I made the most delicious Chocolate Chip Toffee Bars this afternoon. Just thought I'd share the recipe with you. Enjoy !!

Ingredients

  • 2-1/2 cups all-purpose flour
  • 2/3 cup packed brown sugar
  • 3/4 cup cold butter
  • 1 egg
  • 1 cup chopped almonds
  • 2 cups (12 ounces) semisweet chocolate chips, divided
  • 1 can (14 ounces) sweetened condensed milk
  • 1-3/4 cups toffee bits, divided

Directions

  • In a large bowl, combine flour and brown sugar; cut in butter until mixture resembles coarse crumbs. Add egg; mix well. Stir in almonds and 1-1/2 cups chocolate chips. Set aside 1-1/2 cups for topping. Press remaining mixture into a greased 13-in. x 9-in. baking pan.
  • Bake at 350° for 10 minutes. Pour milk over crust; sprinkle with 1-1/2 cups toffee bits, reserved topping and remaining chocolate chips. Bake 25-30 minutes longer or until lightly browned. Sprinkle with remaining toffee bits. Cool on a wire rack. Cut into bars. Yield: 3 dozen.

Pink Saturday, Happy Easter

Mocha Nut Bread

Hi Everyone, seems I've been on a bit of a baking kick lately. The other day, I made this Mocha Nut Bread, it's oh so yummy. Here's the recipe, enjoy !!



Mocha Nut Bread



Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/3 cup baking cocoa
  • 2 tablespoons instant coffee granules
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 1/4 cups sour cream
  • 1/3 cup butter or margarine, melted
  • 1 1/2 cups semisweet chocolate chips
  • 1/2 cup chopped pecans

Directions

  1. In a large bowl, combine the flour, sugar, cocoa, coffee granules, baking soda and salt. In another bowl, beat eggs, sour cream and butter until smooth. Stir into dry ingredients just until moistened. Fold in chocolate chips and pecans. Pour into a greased 9-in. x 5-in. x 3-in. loaf pan. Bake at 350 degrees F for 55-60 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

Mocha Angel Food Torte

Hi Everyone, seems I've been on a bit of a baking kix lately. Just made this Mocha Angel Food Torte this afternoon. It's really simple yet delicious. If you would like the recipe you can find it here


Mocha Angel Food Torte

Ingredients

  • 1 1/3 cups cold milk
  • 1 (3.9 ounce) package instant chocolate pudding mix
  • 1 tablespoon instant coffee granules
  • 1 cup whipping cream, whipped, divided
  • 1 (10 inch) prepared angel food cake
  • 2 (1.4 ounce) bars Heath candy bars, crushed

Directions

  1. In a mixing bowl, combine milk, pudding mix and coffee; beat on low speed for 2 minutes or until thickened. Fold in half of the whipped topping.
  2. Cut cake in half horizontally; place the bottom layer on a serving plate. Spread with half of the pudding mixture. Top with remaining cake.
  3. Fold remaining whipped cream into remaining pudding mixture; spread over top and sides of cake. Sprinkle with crushed candy bars. Chill for 2 hours before serving.

Caught In The Act

Here's a few cute pics of a small red squirrel I've named Mr. Squirrel. I caught him in the act of eating the bird seed from our bird feeder. He sure does love that bird seed.
